It involves bottling the wine early, before alcoholic fermentation has completed. Fermentation then finishes in the bottle, producing bubbles entirely naturally, without added yeast or sugar.\u003c\/p\u003e\n\u003cp\u003eThe Mauzac grapes are hand-harvested. Only first-press juice is used.\u003c\/p\u003e\n\u003cp\u003eFermentation is stopped at 34 g of residual sugar before bottling. Four months later, after the second fermentation, the wine retains 12 g of residual sugar after disgorging.\u003c\/p\u003e\n\u003ch4\u003eTASTING NOTES\u003c\/h4\u003e\n\u003cp\u003eA very pleasant, fresh and fruity wine.
