VINIFICATION AGING
The ancestral method (also called "gaillacoise") is the original method for producing sparkling wine. It involves bottling the wine early, before the end of the alcoholic fermentation of the must. Fermentation therefore completes in the bottle. The fermentation takes place naturally.
This grape variety is harvested by hand. It is produced exclusively from first-press juice.
Fermentation is stopped at 34g of residual sugars for bottling. 4 months later, the finished fermentation leaves 12g of residual sugars after disgorging.
TASTING NOTES
Very pleasant, fruity and delicious. Notes of green apple and tangy pear, good freshness and balance.
Light, pleasant sweetness on the finish reminiscent of fruit.

The Gaillac method is a pleasant drink at aperitif time with family or friends. Serve very chilled (7 to 8°C).
