VINIFICATION & AGEING
The méthode ancestrale (also called méthode gaillacoise) is the original method for producing sparkling wine — older than the Champagne method. It involves bottling the wine early, before alcoholic fermentation has completed. Fermentation then finishes in the bottle, producing bubbles entirely naturally, without added yeast or sugar.
The Mauzac grapes are hand-harvested. Only first-press juice is used.
Fermentation is stopped at 34 g of residual sugar before bottling. Four months later, after the second fermentation, the wine retains 12 g of residual sugar after disgorging.
TASTING NOTES
A very pleasant, fresh and fruity wine. Notes of green apple and tangy pear, lively freshness, beautiful balance. The gentle natural sweetness on the finish echoes the fruit.
FOOD PAIRING
Perfect as an aperitif with family or friends. Pairs beautifully with light starters, fresh cheeses, and fruity desserts. Serve well chilled (7-8°C / 45-46°F).
