The Feline - Minervois AOC Organic - Bories de Maurel

Like Sylla, La Féline is a distillation of the style of Michel Escande's wines: voluptuous, heady without excess, where each sip calls for the next. Its initial nose, fragrant with black pepper, cumin, and tapenade, is intense. It is followed by fine notes of thyme, garrigue, and very ripe, almost "fig-like" red fruits. The palate, all lace, also plays on this register of finesse and elegance, in a rustle of sweet spices and morello cherry. However, beware! Behind this apparent ease, hides an astonishing complexity that the years, like those of a beautiful woman, will only embellish and amplify...

HARVEST and VINIFICATION

This "gallant wine for fine dinners" is the result of a blend of two-thirds Syrah and one-quarter Grenache, enhanced with a hint of Carignan. All of these grapes, harvested by hand on the clay-limestone terroir of Petit Causse, are destemmed before being vatted for a long time. Aging, which lasts at least 16 months, takes place in vats. Filtration is very light.

GUARD

This is an organic wine that has virtually no "dips". Delicious upon release, it seems to have great aging potential – this vintage has less experience than the others, as it has only been around since 1998: at least 6 or 7 years.

AGREEMENTS

An organic gastronomic wine that will pair equally well with a leg of milk-fed lamb or with elaborate sauces, particularly with veal.
