The Spirit of Autumn - Minervois AOC Organic - Bories de Maurel

Esprit d'automne bio is the introduction to Borie de Maurel's collection of great red wines. Firstly, with its minerality, a hint of graphite, then with its aromas of black olive, tobacco, and spices that recall the eminence of the clay-limestone terroirs of the Petit Causse. Then, with its fruit, with its aromas of morello cherry, red berries, and its minty, licorice finish. Finally, with this extraordinary sensation of creamy harmony, suave balance, and delicious serenity so characteristic of the Domaine's reds.

HARVEST and VINIFICATION

The different grape varieties are hand-picked, delicately vinified using an ancestral local method, and aged without artifice. Esprit d'automne is a wine that can do everything, a talented jack-of-all-trades. And, while sketching out an archetype of the ideal red Minervois, it lays the foundations of the Borie de Maurel style, with just the right amount of relaxation, spontaneity, and conviviality.

GUARD

Delicious on the fruit right from the bottle, Esprit d'automne can be kept for 5 years.

AGREEMENTS

The all-purpose wine, equally at home with grilled meats, traditional dishes (cassoulet, stew, etc.) or with slightly spiced exotic cuisine.

SERVING TEMPERATURE

16°C. Can be slightly cooled in summer (14°C).
